I love farm fresh eggs. For years I raised my own egg layers and became spoiled with how firm the yolk and egg whites are. The freshness really makes a difference in taste but also in my baking. So, that brings me to my latest pancake recipe that is fast and easy.
1/3 cup of vanilla Complete protein powder
3 egg whites
1/2 cup rolled oats
1 medium ripe banana
2 tsp baking powder
Mix all the ingredients in a blender until a smooth consistency
If needed, to thin out the batter, add a little plant based milk
Cook on a lightly greased warm skillet
Add any additional topping,(I heated up a blend of
frozen strawberries and blueberries and added a maple infused balsamic vinegar).
